Lexington Craft Beer Week ends Sunday, May 18, but it isn’t too late to pair some new LEX releases with some of our favorite local beer cheeses.

So belly up to the bar + grab a stack of Ritz — just don’t be a double-dipper.

Bock Sabbath + Hall’s Original Snappy Beer Cheese
Blue Stallion Brewing Co.'s Maibok-style release is a hop-forward German lager that should stand up well to the sharp Wisconsin cheddar of Hall’s OG spread. Pace yourself: If you have too much of a good thing, you won’t be standing up at all.

Paddy Cakes + Bootlegger Beercheese
Ethereal Brewing has collaborated with Trellis Brewing + The Void Sake Co. for a new rice lager that’s available on draft at all three locations. Pair it with the mild spread from Winchester-based Bootlegger Beer Cheese to bring out the beer’s light body, subtle sweetness + crisp finish.

Liquid Swords 2 + Kentucky Beer Cheese (Hot)
Mirror Twin Brewing has partnered with Burl Brew to produce a 9% ABV New Zealand IPA. The spicy heat of Kentucky Beer Cheese’s small-batch hot-style spread should complement the bold hops of this IPA, creating a balanced flavor experience.

Country Western Vol. 13: Baker’s Dozen + Howard’s Creek Chocolate Beer Cheese
Country Boy + West 6th breweries have debuted a donut-inspired stout packed with chocolate + raspberry notes. The craveable collab comes in a can and is available at all West Sixth and Country Boy locations. We suggest pairing it with Howard’s Creek Chocolate Beer Cheeseon a graham cracker — and calling it dessert.
